Perfecto para sorprender en el d\u00eda a d\u00eda o en ocasiones especiales.<\/p>\n\n\n\n<p><strong>Receta para 4 personas<\/strong>.<\/p>\n\n\n\n<p><strong>Preparaci\u00f3n de la compota de pera<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pelar y cortar las peras en cubos. <\/li>\n\n\n\n<li>Cocinar con el az\u00facar, el vino y las especias (canela, clavo, nuez moscada y pimienta negra) a fuego suave, hasta que se deshagan.<\/li>\n\n\n\n<li>Triturar y reservar.<\/li>\n<\/ul>\n\n\n\n<p><strong>Preparaci\u00f3n del crumble salado<\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Mezclar la harina, la mantequilla fr\u00eda y la sal. Hornear a 180 \u00b0C hasta dorar.<\/li>\n\n\n\n<li>Dejar enfriar y romper en trozos.<\/li>\n<\/ul>\n\n\n\n<p><strong>Emplatado:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cortar los medallones con una lira o un cuchillo sin sierra, previamente templado con un poco de agua del grifo caliente. Dejar atemperar 5 minutos aproximadamente antes de consumir, y servir el medall\u00f3n de foie gras micuit, sobre una base de compota de pera tibia.
